Ingredients
½ cup mayonnaise
1 tablespoon TRUE’S GOURMET MUSTARD
1Â teaspoon fresh lemon juice
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
¼ cup finely diced red onion (or green onion)
8 large hard boiled eggs, peeled and chopped
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh dill
1Â teaspoon capers, drained
Thinly sliced bread or assorted crackers
Baby arugula or watercress
Preparation
n a medium bowl, whisk together the mayonnaise, True’s mustard, lemon juice, salt and pepper.

Fold in the onion, eggs, chives, dill and capers. Cover and chill in the refrigerator for 20 minutes.

Spread on bread and top with baby arugula or watercress or serve with assorted crackers.
